Born in St. Catherine Parish, Jamaica, I grew up watching my mother cook food. Her plan was to open her own brick and mortar restaurant, Bruce’s Cuisine. We came to the states so that she could get an American education. My mother went to business school to learn how to run a restaurant. However, sadly, she became sick soon after she graduated and the doctors told her that she would not be able to work due to her condition. Her dream was shattered.
Although my mother was unable to fulfill her dream of opening a Jamaican restaurant, that did not stop her from cooking for others. Everyone loved her food. She cooked for church members and those in our neighborhood. They could not get enough! As a teenager at that time, I did not understand all of the hype. My preference was hamburgers, pizza, and fries. Keep the Oxtail, Beef Patties, and Callaloo. I remember watching my mother cook and saw the utter joy that she had when people ate her food. I loved to see this happiness in her.
I started to understand this cooking happiness that came over my mother. During this time I learned a few cooking techniques from my mother. Fast forward to college; my mother passed away during my second year of pharmacy school. I was crushed and any love I had for cooking faded. It was not until I graduated and started doing some world traveling that my cooking spark was reignited.
No matter what continent or island I was on, there was always some place to get Jamaican food. During this time, I also learned that I had brothers and sisters living in Jamaica that I was unaware of and I arranged to go see them. My sister, Marcia, cooked for me every day while I was there. When she cooked for me, I saw the same joy in her eyes that I had seen in my mother. When I got back to the states, I started to cook for friends and coworkers. The feeling was back!
Bruce’s Jamaican Fusion Soul is a collaboration of Family and American and Jamaican Food; hence the
name. Each dish is named after a family member, who was either the inspiration behind the dish or the family member’s recipe. For example, Jhourni’s Festival is for of my daughter who loves to bake. She came up with this dough and adjusted the sweetness to create a perfectly fried festival!
